Struggle Meals
Being a parent is exhausting and expensive. Sometimes we either don't want to make dinner or we're strapped for cash. Here's my list of what I like to call "struggle meals." These are all of me and Trent's favorite meals to make when we don't have time or have a tight budget.
Breakfast for Dinner
This one is a favorite of my son's. What kid doesn't want pancakes for dinner? We load up on pancakes, eggs, sausage and fruit. It's fun and easy!

Pizza
Ok, but hear me out. We aren't talking just a frozen pizza. We're talking homemade but the easy way. Grab the pre-made crust, sauce, cheese and topping and let your kids create the pizza of their dreams.
Spaghetti
Spaghetti is not only cheap, but it feeds a ton of people. If you have a big family this is my favorite go to. We like to add veggies to our sauce in a blender to add some extra nutrition and use ground beef in the sauce so no one's fighting over meatballs.

Garlic Alfredo
This is my absolute favorite chicken Alfredo recipe I have ever made and it's so easy! You just need a crock pot.
Ingredients
- 1 lb Chicken breast
- Cellentani noodles
- Garlic Parmesan sauce
- 1 jar alfredo sauce
- Â 1/2 tsp salt and pepper
- 1 tsp each of paprika, onion power and Italian seasoning
- 1/4 cup parmesan cheese
- 1 cup shredded mozzarella
Directions
- Add chicken, garlic parm sauce and seasoning to a crock pot and cook on low for 5 hours
- Chop or shred your chicken while you cook the noodles
- Add the noodles, chicken and Alfredo sauce and cheeses to the crock pot until the cheese is melted
- Serve
Chicken Drumsticks
Chicken drumsticks are cheap and so easy. We like to season them with the McCormick Montreal chicken seasoning and serve with red potatoes and a green veggie on the side.
